Kimpira Gobo (Fried Burdock)

  • SERVINGS 6 – 8
  • 1/2 lb. gobo
  • 1 tablespoon vegetable oil
  • 1/4 cup shoyu
  • 2 tablespoons sugar
  • 2 tablespoons shredded shrimp or katsuobushi
  • 1/2 teaspoon gourmet powder

Cut 1/2 pound gobo thin like matchsticks. Soak in water 15-20 minutes. Drain. Put 1 tablespoon vegetable oil in frying pan and sauté gobo for 5-8 minutes.

Add shoyu, sugar, shredded shrimp or katsuobushi and gourmet powder. Cook until sauce is absorbed. Add chili pepper or pepper if desired.
