Shirley Kimura/BPPM
- 2 1/2 Cups Light Brown Sugar, packed
- 2 Cups Granulated Sugar
- 1/2 tsp Salt
- 2 1/2 Sticks Butter or Margarine (10 oz.)
- 1 Tbsp Baking Powder
- 4 Cups All Purpose Flour
- 6 Ea Large Eggs
- 1 1/2 Cups Walnuts, diced
1. Preheat oven to 375°F. Grease pans.
2. Cream sugars, butter, salt, and baking powder. Mix in flour until incorporated. Add eggs and mix until creamy. If mixing by hand add eggs before flour. Add walnuts. If using a stand mixer (hand-held mixer is not powerful enough), mix on low speed for 30 seconds. Do not over mix!!
3. Scrape down sides and mix on medium speed for 2 minutes or 5 minutes by hand. Divide into pans and bake for at least 25 minutes (they will rise and then flatten). Wait for 3 minutes after they have flattened completely then remove from the oven to cool.
