Jamaican Pound Cake

  • 1 large banana
  • 2 eggs
  • 1/4 cup dark Jamaica rum
  • 1 pkg pound cake mix (17-oz)
  • 1/2 cup dairy sour cream
  • 1/8 tsp nutmeg
  • 3 Tbsp sliced almonds for pan coat

Mash banana to make 1/2 cup. Blend with eggs and rum. Beat into pound cake mix until smooth; beat in sour cream and nutmeg. Butter 9x5x3-inch loaf cake pan; sprinkle with almonds. Pour cake batter into pan. Bake in 325 degree oven 70-75 minutes until done. Place on wire rack to cool 10 minutes before removing from pan. Cool thoroughly before cutting.
