Iriko (Dried Fish)

  • 1 (5 oz.) pkg. iriko (chuba) (medium sized)
  • 1 c. shoyu
  • 3 tbsp. sugar
  • 2 tbsp. sesame
  • chili pepper (opt.)

Clean iriko. Put into baking pan and roast in moderate 275 degree oven for 15 minutes until crisp. Cook shoyu and sugar in a large saucepan until a little thick. Add crisp iriko and stir quickly over a low flame until every fish is covered with sauce. Remove from stove. Sprinkle with roasted sesame.
