Imitation Chinese Bird Nest Soup

  • 1 bundle long rice (bean thread)
  • 1 1/2 tsp. salt
  • 1/4 tsp. ve-tsin (monosodium glutamate)
  • 5 cups soup stock or water
  • 2 eggs well beaten
  • 1/2 cup pork
  • 1/2 cup ham
  • 1 cup bamboo shoots
  • 1/2 cup mushrooms
  • 1/2 cup green onion

Soak long rice in boiling water for ½ to 1 hour. Drain and cut into very small pieces. Chop pork, ham, bamboo shoots and mushrooms. Add all of the ingredients (except eggs and onion) to stock and simmer for 15 to 20 minutes. Just before serving, add beaten eggs and green onion. Yields 6-8 three-fourths cup servings.
