Haupia (Hawaiian Coconut Pudding)

- 2 c. coconut milk*
- 2 Tbsp. cornstarch
- 3 Tbsp. sugar
- 1/8 tsp. salt
*Do not substitute. Do not confuse with coconut water which is the liquid from a fresh coconut.
Mix 1/2 cup coconut milk with dry ingredients to make a smooth paste. Scald remaining milk over low heat. Add paste, stirring rapidly. Cook until mixture is clear and coats spoon. (Use only low heat, otherwise will curdle.) Pour into shallow pan, cool in refrigerator until firm. If firmer haupia is desired, use 2 1/2 tablespoons cornstarch.
