Green Banana Balls (Mofongo)

  • 6 green bananas (Chinese or Williams)
  • 1 c. salad oil, for frying
  • 1/2 lb. bacon
  • 1 tsp. garlic powder
  • 1/4 tsp. salt

Peel bananas, cut into lengthwise halves. In a large skillet, heat oil. Fry bananas until tender. Place in a large bowl; mash thoroughly. Fry bacon until crisp. Crumble. Add bacon and remaining ingredients to bananas; mix well. Shape into 1-inch balls. Makes 3 dozen.
