Easy Mochi with Azuki and Nuts

  • 1 box Betty Crocker Super Moist Yellow Cake Mix with Pudding
  • 3 eggs beaten
  • 1/4 c. oil
  • 1 c. water
  • 1/2 c. plain yogurt
  • 1 can whole berry cranberry sauce
  • 1/2 c. walnuts
  • Preheat oven to 350 degrees.
  • Lightly spray 9 x 13 pan.
  • Combine beaten eggs, oil, water and yogurt. Add to Cake mix. Mix well.
  • Spoon 2/3 of mixed batter into pan.
  • Spread 1 can of cranberry sauce evenly over batter. Top with rest of batter.
  • Sprinkle nuts
  • Bake 350 degrees for approximately 50 minutes. Test with toothpick.
  • Cool before removing from pan.
  • Serve with ice cream.

Note substitution for cranberry sauce: Homemade Ohelo Berry sauce is ono too.
