Crab Cakes
Vern Nagasako
- 1 round onion, chopped
- 2 cloves garlic, minced
- 1 T. olive or vegetable oil
- 1 T. butter
- 1 box Stove Top Stuffing (your favorite)
- 2 large eggs
- 6 oz. crab meat, omit liquid
- 8 oz. imitation crab meat, chopped fine
- panko bread crumbs, for coating
- 1/4 C. vegetable oil for frying
- sweet chili sauce
- mayonnaise
Sauté onions and garlic in oil and butter. Make Stove Top Stuffing as directed. Combine onions, garlic and stuffing. Let cool. Mix eggs and crab meat with stuffing. Make patties, coat with panko, and fry in vegetable oil. For the sauce, mix equal amounts of chili sauce and mayonnaise to taste.
