Cornmeal Pancakes
- 1/4 cup Flour, all-purpose
- 1/2 cup Cornmeal, fine white
- 3/4 teaspoon Baking Powder
- 2 tablespoons Sugar
- Dash Salt
- 1 Egg, beaten
- 1/3 cup Milk
- 1 to 2 tablespoons Butter, melted
Sift flour, cornmeal, baking powder, sugar and salt in a mixing bowl. Add egg, milk and melted butter and stir until just mixed. Do not overmix.
To cook, pour onto hot buttered griddle. Cook until bubbly around the edges. Turn and cook the other side. Serve with butter and syrup or honey.
