Cod Salad (Serenata)

  • 1 lb. salted cod
  • 2 qt. water
  • 3 onions, sliced
  • 3 tomatoes, sliced
  • 3 green peppers, sliced
  • 1 c. olive oil
  • 1/2 c. vinegar
  • 1 tsp. salt
  • 1/4 tsp. pepper

Soak cod for 4 hours. Drain, put into a large saucepan and add water. Bring to a boil, lower heat and simmer for 15 minutes. Drain and rinse. Remove skin and bones; shred. Put cod, onions, tomatoes and green peppers into a large salad bowl. Combine olive oil, vinegar, salt and pepper. Pour over salad and toss lightly. Chill 1 to 2 hours before serving. Makes 8 servings.
