Chewy Pineapple Oatmeal Cookies

• 1½ c sifted flour
• 1 tsp baking powder
• 1 tsp salt
• ¼ tsp nutmeg
• ½ c margarine
• ½ c oatmeal
• 1 c sugar
• 1 egg
• 1 tsp vanilla
• 1 1# can crushed pineapple, drained

Sift together dry ingredients. Add oatmeal to flour mixture. Cream margarine. Add sugar and then egg. Mix until smooth.

Add drained pineapple. Mix in flour mixture.

Drop by teaspoonfuls onto greased cookie sheet and bake at 375° F. for about 12 minutes.

Yields: 3 dozens chewy cookies.
