Carrot Cake

Beat together:

  • 3 eggs
  • 2 c. sugar
  • 1 1/2 c. salad oil

Sift together and add to above mixture:

  • 2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. salt

Add to above mixture:

  • 2 c. grated carrots
  • 1 c. crushed pineapple, drained
  • 1 c. chopped nuts

Bake 325 degrees F. 50 – 60 minutes. Frost with cream cheese frosting.
