Black Bottom Cupcakes

Serves 18

Combine in mixing bowl:

  • 1 c. (8 oz. pkg.) cream cheese
  • 1 unbeaten egg
  • 1/3 c. sugar
  • 1/2 tsp. salt

Beat well. Stir in with wooden spoon – 1 6 oz. pkg. semi-sweet chocolate morsels.

Sift together into mixing bowl:

  • 1 1/2 c. sifted all purpose flour
  • 1 c. sugar
  • 1/4 c. Hershey’s cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Add:

  • 1 c. water
  • 1/3 c. cooking oil
  • 1 Tbsp. vinegar
  • 1 tsp. vanilla

Beat well until well combined. Fill muffin tins half full with chocolate batter. Top each with a “dollop” of cream cheese mixture. For fancy results, you can sprinkle on sugar and chopped blanched almonds. Bake at 350 degrees for 30 – 35 minutes.
