Banana Loaf Cake

Dorothy Park Kataoka, Class of 1945

  • 1/2 cup butter
  • 1-1/3 cup sugar
  • 3 eggs
  • 1/2 tsp vanilla
  • 1 cup banana pulp
  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 Tbsp milk

Cream butter; add sugar slowly, beating well. Add unbeaten eggs one at a time. Beat well after each egg is added. Add vanilla extract and fold in banana pulp. Add remaining dry ingredients, sift all together, alternating with milk. Bake in well-greased loaf or tube pan in 350 degree oven about 1 hour.

NOTE: Do not make more than 2 batches at a time for best result. Has not failed me, yet.
