Banana Cake Pudding (Vietnamese)
- 2 lbs. bananas (very ripe)
- ½ cup coconut milk
- ½ cup sugar
- Pinch of salt
- 1 cup flour, sifted
- 9-inch cake pan
- cooking oil
- 1 tbsp. flour
Peel bananas and mash them with the flat side of a heavy knife. Put into mixing bowl. Add coconut milk, flour, sugar and salt to bananas and mix thoroughly. Oil the cake pan, then put in flour. Shake around to coat sides and bottom of pan, then pour out excess flour. Pour banana mixture into pan and and bake at 350 degrees F. until golden brown on top, about 1 hour. May be served hot or cold. Good with tea.
