Banana Bread #3

  • 2 Sticks Butter, softened
  • 2 Cups Granulated Sugar
  • 4 Ea Extra Large Eggs
  • 1/2 tsp Salt
  • 2 tsp Baking Soda
  • 2 tsp Vanilla
  • 1 Cup Chopped Nuts
  • 2 Cups Mashed Bananas
  • 2 1/2 Cups Cake Flour, sifted 3 times

1. Preheat oven to 350°F. Grease pans.
2. Cream butter and sugar. Stir in eggs one at a time. Add salt, baking soda, vanilla, nuts, and bananas. Mix well.
3. Fold cake flour into the mixture. Fill pans and bake for 45 minutes or until done.

Yield: 2 loaf pans or 4 baby loaf pans

Recipe Story/Helpful Hints:
If substituting All Purpose Flour for the Cake Flour, measure 2 ½ cups and minus 5 tablespoons. I got this recipe from a worker at the 2006 Farm Fair Voter Registration booth.
