Baked Mochi

  • 5 cups mochiko
  • 1 box (1 lb.) dark brown sugar
  • 1 can (12 oz.) frozen coconut milk, thawed
  • 2 1/2 cups milk
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • Sesame seeds

Mix ingredients thoroughly and pour into greased 9×13 pan. Sprinkle with sesame seeds and bake at 350° for 1 hour and 15 minutes. Cool and cut into serving pieces with a plastic knife.

VARIATION: 1 can of tsubushian may be added.
