Coconut Cream Cheese Frosting

  • 1/3 cup + 1 Tbsp margarine or butter
  • 1-1/2 cup flaked coconut
  • 2 3-oz pkg cream cheese
  • 4 cups sifted powdered sugar
  • 1-2 Tbsp milk
  • 1/2 tsp vanilla

Melt 1 Tbsp margarine in saucepan; add coconut. Saute until golden brown, stirring constantly. Remove from heat. Cream remaining margarine; add cream cheese, sugar and milk, beating after each addition. Add vanilla and 3/4 cup sauteed coconut. Spread on cake; sprinkle with remaining coconut.
