Pork Bone Soup

A Graduate

  • 1 lb pork bones
  • 1-1/2 cups miso
  • 1 tsp salt
  • 1 daikon, cut in 3/4-inch squares
  • 1 carrot, cut in 3/4-inch squares
  • 1/2 pkg konbu (dried kelp), soaked and knotted

Put bones in pot and cover with water 1-1/2 inches above the bone and boil for 1 hour with salt. Add miso, daikon, carrots and kelp. Cook until vegetables are soft.
