Macadamia Pear Bars

Class of 1947

  • 1-1/4 cups all-purpose flour, divided
  • 3/4 cup sugar, divided
  • 1/4 cup butter or margarine
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 can (1 lb) pear halves, drained and diced
  • 1 cup flaked coconut
  • 1/2 cup macadamia nuts
  • 1 tsp pure vanilla

Combine 1 cup flour and 1/4 cup sugar; cut in butter till mixture resembles coarse meal. Pat firmly into buttered 9-inch square pan. Bake in 350 degree oven 15 minutes. Meanwhile, beat eggs till light. Gradually beat in remaining 1/2 cup sugar. Mix together remaining 1/4 cup flour, baking powder and salt. Stir into egg mixture. Fold in remaining ingredients and pour over warm, baked mixture. Return to oven and bake 30 minutes longer. Cool in pan and cut into bars.

Yield: 24 bars
