Pineapple Nut Bars
- 1 can (1lb-4oz) can crushed pineapple
- 1/4 cup apricot jam
- 3 Tbsp cornstarch
- 1-1/3 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1-1/2 cups rolled oats
- 3/4 cup brown sugar, packed
- 3/4 cup butter or margarine
- 1/3 cup walnuts, finely chopped
Combine first three ingredients and cook over low flame till thick. Cool. Combine flour, soda and salt. Mix in oats and brown sugar; work in butter till crumbly. Press half of crumb mixture firmly in 9-inch square pan. Pour filling over crumb mixture. Cover filling with remaining half of the crumb mixture. Sprinkle with nuts. Bake in 375 degree oven for 30 minutes. Cut when cool.
