Butterscotch Bars
- 6 Tbsp butter or margarine
- 1/2 cup brown sugar
- 1 cup sifted all-purpose flour
- 2 eggs
- 1 cup brown sugar
- 1-1/2 tsp vanilla
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chopped walnuts
- 1 pkg (6-oz) butterscotch pieces
In small mixer bowl, cream butter and the 1/2 cup brown sugar till light and fluffy. Blend in the 1 cup flour till crumbly. Pat mixture into ungreased 11x7x1½-inch baking pan. Bake in 350 degree oven for 10 minutes; remove from oven. In bowl, beat eggs till thick and lemon-colored; beat in the 1 cup brown sugar and vanilla. Combine remaining flour, baking powder and salt; add to egg mixture. Stir in nuts. Spread over baked crust; sprinkle with butterscotch pieces. Bake 30 minutes more; cool and cut into 2×1½-inch bars.
