Satsuma Plum Pickle

  • 10 lbs. plums, ripe but firm
  • 1/3 cup salt

Cut plums in half. Soak overnight. Drain and dry in hot sun for a day.

Syrup:

  • 2 cups raw sugar
  • 1 cup water
  • 3 tbsp. molasses
  • 1 tsp. five spice

Bring above ingredients to a boil. Add plums and let it soak for a couple of days.
