Scandinavian Cookies
- ¾ cup shortening (butter or margarine)
- 1½ cups sifted powdered sugar
- 2¼ cups enriched sifted flour
- ¾ tsp. baking powder
- ¾ tsp. cream of tartar
- 1 unbeaten egg
- 1 tsp. lemon extract
- Nuts to decorate (pecans or walnuts)
Cream shortening and sugar. Sift dry ingredients together, then add to shortening mixture. Add egg and extract. After dough is mixed, chill. Then roll in balls and press it down with the nuts on top. Bake on ungreased pan, at 375 degrees for 8 to 10 minutes. Makes 5 doz. cookies.
