“Red Panini Sherbet” (Prickly Pear)

  • 1 tbsp. gelatin (one envelope) soaked in ½ cup cold water
  • 1½ cup water ) Boil 8 minutes
  • 4 tbsp. white sugar )
  • 6 tbsp. corn syrup-white Karo

Add gelatin to the syrup and stir until it is dissolved. Cool then add:

  • 6 tbsp. lemon juice (2 large lemons)
  • 3 cups Panini-pulp and juice
  • 1¼ cup sugar

Freeze to a mush. Then add 1½ cups undiluted chilled can milk which must be whipped, fold mixture and freeze. This Panini Sherbet may be stored in plastic containers or paper and plastic individual cups topped with wax paper or foil.
*ADVICE
When cutting fruit off plant be sure your back is toward the wind. Use leather gloves if you have them. If not wrap rags around the picking hand. Put fruit in a bucket. Let water run over on the fruit awhile, then with rubber gloves and a “Tawashi”, wash off prickers. (This isn’t as hard as it may seem).
When fruit is clean of prickers wipe dry. Cut both ends off and slit about ¼ inch deep down the center, spread the outer skin apart and spoon out the seedy part of the fruit and use your hand press ricer to extract pulp and juice. That’s all!
