Delicious Carrot Cookies
Mrs. Leonora M. Johnasen – Honokaa
- 1 c shortening
- ¾ c sugar
- 1 egg
- 1 c mashed cooked carrots
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla
- 2 c flour
- ½ tsp lemon extract
Cream shortening and sugar, add egg, mashed carrots and flour sifted with baking powder and salt. Add flavoring, and drop by small spoonful on oiled baking sheet. Bake in moderate oven, 350° F. until brown for 12 to 15 min. Frost cookies while still warm with an icing made with juice of 1 orange, grated orange peel, and powdered sugar added to desired thickness.
