Quick Dinner Rolls

  • 2 1/4 cups flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1 pkg. (1/4 oz.) active dry yeast
  • 1 cup very warm water (120° to 130°)
  • 2 Tbsp. margarine
  • 1 egg

Mix 1 1/4 cups of the flour with the sugar, salt and yeast in a large bowl. Add water, margarine and egg; beat until smooth. Stir in remaining flour until smooth. Scrape batter from side of bowl. Cover; place in a warm place to rise until double in size (about 30 minutes). Grease 12 muffin cups. Stir down batter by beating about 25 strokes. Spoon into muffin cups. Let rise for 20 to 30 minutes or until batter rounds over top of muffin cup. Heat oven to 400°. Bake 15 to 20 minutes or until golden brown.
