Vegetarian Lentil Stew

  • 1 c. lentils
  • 1 – 8 oz. tomatoes, cut up
  • 1/2 c. chopped onions
  • 1/3 c. chopped green peppers
  • 1/4 c. celery
  • 3 1/2 c. water
  • 1 tsp. salt
  • 1/4 c. sliced carrots
  • 1/4 thyme, crushed

Wash lentils, mix remaining ingredients, simmer. Cover for 2 hours.

Yields: 4 cups.
