Vegetarian Lentil Stew

- 1 c. lentils
- 1 – 8 oz. tomatoes, cut up
- 1/2 c. chopped onions
- 1/3 c. chopped green peppers
- 1/4 c. celery
- 3 1/2 c. water
- 1 tsp. salt
- 1/4 c. sliced carrots
- 1/4 thyme, crushed
Wash lentils, mix remaining ingredients, simmer. Cover for 2 hours.
Yields: 4 cups.
