Baked Eggplant

  • 2 medium long eggplant
  • Mayonnaise
  • 1/4 c. bread crumbs
  • 1/4 c. Parmesan cheese
  • 1/4 tsp. salt

Cut eggplant in 1/2-inch slices, lengthwise. Roll in mayonnaise and salted bread crumbs. Place in shallow baking dish. Top each slice with dab of mayonnaise, rest of bread crumbs and cheese. Bake 15 minutes in 425 degree oven. Serves 4.
