New England Carrot Cake

Cream together:

  • 2 cups sugar
  • 4 eggs

Add:

  • 2 jars baby food carrots (Jr. size)
  • 1 can crushed pineapple, drained
  • 1 cup raisins
  • 1 1/3 cup oil
  • 1 tsp. vanilla
  • 2 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt

Blend well. Bake in ungreased 9 x 13 baking pan at 375 degrees for 40 minutes.

Frosting

Blend together:

  • 1/2 pkg. powdered sugar
  • 2 tsp. butter
  • 1 pkg. (8 oz.) cream cheese
  • 1 tsp. vanilla
