New England Carrot Cake
Cream together:
- 2 cups sugar
- 4 eggs
Add:
- 2 jars baby food carrots (Jr. size)
- 1 can crushed pineapple, drained
- 1 cup raisins
- 1 1/3 cup oil
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. baking soda
- 1 tsp. salt
Blend well. Bake in ungreased 9 x 13 baking pan at 375 degrees for 40 minutes.
Frosting
Blend together:
- 1/2 pkg. powdered sugar
- 2 tsp. butter
- 1 pkg. (8 oz.) cream cheese
- 1 tsp. vanilla
