Pickled Pipinolas (Choyotes)

  • 1 gal. sliced pipinolas (use peel)
  • Ice cubes
  • ½ cup salt

Salt and add ice cubes and soak for 2 to 3 hours.

Bring to a boil:

  • 4 cup cider vinegar
  • 5 cup white sugar
  • 2 tsp. celery seed
  • 2 tsp. mustard seed
  • 2 tsp. turmeric
  • 6 whole cloves

Pour drained pipinolas (do not wash out salt) into this syrup and heat through. Pour into hot sterilized jars. Onions may be added.
