Fresh Apple Cake
- 2 cups sugar
- 1¼ cups liquid vegetable oil
- 2 eggs
- 1 tsp. salt
- 1 tsp. baking soda
- 2 tsp. vanilla
- 3 cups flour
- 3 cups fresh apples (peeled, cored and chopped)
- 1 cup chopped walnuts
- 1 cup crushed pineapple, drained
- ½ cup chopped maraschino cherries
Mix sugar and oil, add eggs and beat well. Add soda, salt, vanilla, apples, nuts, cherries and pineapple. Add flour a little at a time. Blend well. Bake in a well greased and floured tube pan. Bake 1 hour in a 350 degrees F. oven.
