Shira Ae (Vegetable with Tofu Sauce)

- 1 tofu — boil and squeeze in clean dish towel
- 1 bunch watercress — clean, boil, drain and cut into 2″ lengths
- 1 konnyaku cut in thin strips
- 1/4 teaspoon gourmet powder
- 3/4 teaspoon salt
Put konnyaku in an ungreased frying pan and cook over slow fire. Add salt and gourmet powder and cook until dry. Cool.
Sauce:
- 1/3 cup peanuts — roasted & ground
- 3/4 cup miso
- 2 1/2 tablespoons sugar
- 1/4 teaspoon gourmet powder
- Garnish: Sesame seeds pan roasted
Grind the roasted peanuts fine in suribachi. Add miso, sugar and gourmet powder and continue grinding until well blended.
Put the squeezed tofu in the above mixture and grind well. Add the watercress and konnyaku. Mix thoroughly.
Garnish with ground sesame seeds.
Boiled string beans, makina (won bok) or head cabbage may be substituted for watercress.
