Papaya Pudding
- 2 cup ripe papaya pulp (mashed)
- ½ cup bread crumbs
- 1 cup flour
- ¼ cup butter
- ¾ cup sugar
- 1 egg, well beaten
- 1 tsp. flavoring (vanilla, grated lime or orange rind)
- ½ cup crushed pineapple, drained (optional)
Cream butter and sugar. Add well beaten egg, then flour. Add papaya, salt and bread crumbs, and flavoring. Steam in a buttered pan for 2½ hours or until done. Serve with sauce.
Sauce:
- 1 cup milk
- ½ cup ripe papaya pulp
- 1/3 cup sugar
- ¼ tsp. vanilla
- 2 tbsp. flour
Mix all ingredients except flavoring and boil continuously stirring until thick. Add flavoring immediately after removing from fire.
