Nepalese Fried Rice

  • 2 cups uncooked rice
  • ¼ cup butter or oil
  • 2 eggs, beaten or, cooked chopped chicken or meat
  • ½ cup chopped onions
  • ½ cup chopped fresh tomatoes
  • ½ cup fresh green peas
  • 2 small bay leaves
  • 2 cardamon seeds
  • 2 whole cloves
  • 1 tsp. salt

Cook rice till done. Melt butter in skillet then add onions, bay leaves, cloves, cardamon seeds, eggs and tomatoes and cook till tender. Add rice and mix together. Cover mixture with a tight lid and cook for 3 minutes. Add fresh peas and mix together. Cook 10 minutes or until peas are tender. Serve with hot spiced main dish.
