Mochi Cake

  • 16 oz. (3 1/2 cups) mochiko
  • 2 1/2 cups sugar
  • 2 tsp. baking powder
  • 3 cups milk
  • 1/2 cup (1 block) margarine or butter, melted
  • 5 eggs, beaten
  • 1 tsp. vanilla
  • 1 tsp. lemon extract
  • 1 cup shredded coconut

Combine all ingredients and mix well. Bake at 350° in a greased 9×13 pan, uncovered for 1 hour.
