Maui Pineapple Pickles
- 3 cups sugar
- 1 cup vinegar
- 2 or 3 sticks cinnamon
- 5 to 7 cups cubed fresh pineapple
Boil sugar, vinegar and cinnamon until thick (about 10 minutes). Add pineapple and boil until pineapple is golden yellow and glassy. Remove fruit only and put into jars. Boil syrup five or ten minutes longer. Watch syrup as it may darken instantly.
Pour syrup over fruit and seal jars immediately.
Will keep on cabinet for months or years. Good to glaze ham, top ice cream, puddings, cakes. Also very good with steak.
