Sweet Cucumber Relish
- 8 large ripe cucumbers
- ¼ cup Hawaiian salt
- 4 Sweet red peppers-seeded and cored
- 2½ cups sugar
- 4 large quartered onions
- 4½ tsp. each celery seed and mustard seed
- 1½ cups white vinegar
Peel and slice cucumbers into crock or glass bowl. Add salt and let stand overnight in refrigerator. Drain and force thru coarse blade of food chopper, with peppers and onions. Put in kettle. Add remaining ingredients and bring to boil and cook, uncovered, stirring occasionally, about 30 minutes. Pack in 3 hot, sterilized pint jars and seal.
