Mango Bars

Reid Siarot

  • 2 C. flour
  • 2 blocks butter
  • 1/2 C. sugar for crust
  • 3 C. chopped mango
  • 3/4 C. sugar for filling
  • 1/3 C. water
  • 3 T. cornstarch mixed with water
  • 2 C. oatmeal
  • 1/2 C. sugar for topping
  • 1 1/4 C. flour for topping
  • 1 block butter for topping

Preheat the oven to 300°. Combine flour, butter, and sugar into a pea-size dough. Pat dough into 9″x13″pan. Combine mango with sugar and water and cook until soft, about 20 to 25 minutes. Stir cornstarch/water mixture into mango. Cool slightly then pour over crust. Combine oatmeal, sugar, flour, and butter into a pea-size topping. Sprinkle topping evenly over filling. Bake for 1 hour.
