Chicken Salad

  • 5 cups cooked chicken, cut in chunks
  • 2 tbsp. salad oil
  • 2 tbsp. orange juice
  • 2 tbsp. vinegar
  • 1 tsp. salt
  • 3 cups cooked rice
  • 1½ cups small green grapes
  • 1½ cups sliced celery
  • 1 (13½ oz.) can pineapple tidbits, drained (1 cup)
  • 1 (11 oz.) can mandarin orange, drained
  • 1 cup toasted slivered almonds
  • 1½ cup mayonnaise

Combine chicken, salad oil, orange juice, vinegar and salt; let stand while preparing remaining salad ingredients (or you can refrigerate mixture overnight). Gently toss together all ingredients just before serving. Makes 12 servings.
