Chicken Salad
- 5 cups cooked chicken, cut in chunks
- 2 tbsp. salad oil
- 2 tbsp. orange juice
- 2 tbsp. vinegar
- 1 tsp. salt
- 3 cups cooked rice
- 1½ cups small green grapes
- 1½ cups sliced celery
- 1 (13½ oz.) can pineapple tidbits, drained (1 cup)
- 1 (11 oz.) can mandarin orange, drained
- 1 cup toasted slivered almonds
- 1½ cup mayonnaise
Combine chicken, salad oil, orange juice, vinegar and salt; let stand while preparing remaining salad ingredients (or you can refrigerate mixture overnight). Gently toss together all ingredients just before serving. Makes 12 servings.
