Chinese Chicken Salad and Sesame Seed Oil Dressing
- 1 2½ lb. broiler-fryer
- 1 tbsp. salt
- 1 carrot, chopped
- 1 onion, coarsely chopped
- 1 stalk celery, chopped
- 2 cups peanut oil
- ½ cup Chinese sai fun (bean threads)
- 3 cups shredded iceberg lettuce
- ½ cup chopped green onions
- 1 tbsp. sesame seeds
- ½ cup chopped Chinese parsley
This salad makes a beautiful and different dish—either as a side dish or a main dish.
Place the chicken in a large pot with water to cover. Add the salt, carrot, onion, and celery. Simmer until chicken is tender. Remove chicken from the pot, take off the skin, and cut meat from the bones in ½-inch slivers. Heat the peanut oil and quickly fry chicken slivers until crisp, 1 or 2 minutes. Remove and drain on paper towels. Next, drop the Chinese bean threads into the hot peanut oil, stirring constantly for a few seconds, until the bean threads are crisp but not brown. (They look like thin crisp noodles.) Remove bean threads from oil and combine with the shredded lettuce, green onions, chicken slivers, and sesame seeds. Top with Chinese parsley. Just before serving, add the following dressing:
Sesame-Seed-Oil Dressing
- ½ tsp. sesame-seed oil
- 3 tbsp. Chinese plum sauce
- 1 tbsp. sugar
- 1 tbsp. white wine vinegar
- 1 tbsp. salad oil
- ½ tsp. dry mustard
Blend all ingredients and mix with Chinese Chicken Salad.
