Left-Over Spanish Rice

  • 2-3 slices bacon or ½ Portuguese sausage, sliced
  • ½ med. onion, diced
  • 1 stalk celery, diced
  • 1 sm. bell pepper, diced
  • 1 clove garlic, grated

Saute together with bacon.

  • 2 cups cook rice (leftover)

Refrigerated rice must be loosened with small amounts of water.

  • ½ cup catsup (more or less to taste)
  • salt and pepper to taste

Mix with rice and add to the above mixture and cook till rice is nice and fluffy.
