Yudofu With Goma Miso (Cooked Tofu With Goma Miso Sauce)

SERVINGS 4

  • 1 tofu, cut in 4 pieces
  • 1 tablespoon katakuri

Mix katakuri in 1/4 cup water and stir into 6 cups boiling water. Add tofu pieces and cook slowly until heated through. Remove tofu, place in a small bowl, and serve with goma miso.

Goma Miso:

  • 2 tablespoons pan roasted goma (sesame seeds)
  • 6 tablespoons miso
  • 4 tablespoons stock (shrimp or katsuobushi)
  • 2 tablespoons sugar
  • 1/2 teaspoon gourmet powder

Mix all ingredients thoroughly.
