Mushi Yokan (Steamed Red Beans)

  • 1 cup strained cooked azuki (see pg. 121 for first part of recipe for azuki koshi an)
  • 1½ cups sugar
  • 1 cup all-purpose flour
  • ½ cup liquid from azuki

Mix all ingredients together. Pour into a loaf pan and steam 45-60 minutes. Cool and slice.
