Ume Yokan (Red Pickled Plum Dessert)

  • 1 stick kanten
  • 2 cups water
  • 1 cup sugar
  • 2 tablespoons strained ume (red pickled plum)

Wash kanten clean and soak in water for 1/2 hour. Drain water and cook kanten in 2 cups water until thoroughly dissolved. Add sugar and cook a few minutes longer.

Add 1/2 cup of cooked kanten into the strained ume paste. Then pour this mixture into the rest of the cooked kanten, stirring well. Strain and pour into shallow 8-inch square pan and cool. Cut into pieces and serve.
