Sangatsu Gasahi (Okinawan Confection)

  • Makes 3 dozen
  • ¼ teaspoon salt
  • 3 eggs
  • 1½ cups sugar
  • 3 cups all-purpose flour
  • ½ teaspoon vanilla
  • 1½ tablespoons vegetable oil

Put salt and 1 egg into a mixing bowl and mix well. Add sugar and flour alternately, about ⅓ at a time, mixing well after each addition. Eggs are added between each addition of sugar and flour. Repeat process until all ingredients are used up.

Add oil and vanilla just before last amount of flour is added.

Place dough on a floured board and flatten and stretch out to about 2-inch width and ⅜-inch thickness.

Make marks on the top with back of knife and cut into 1-inch pieces. Heat oil in deep pan (about 350°) and fry. Drain on paper towel.
