Guinataan (Tambotambong or Paradosdos)

  • 1 small can frozen coconut milk
  • 2 cans water (using frozen milk can)
  • 1¼ cups brown sugar
  • 1 cup Mochi balls (more if you want)
  • ½ cup sweet corn
  • 1 large sweet potato, peeled & diced
  • 1 small can salad fruits (optional)
  • Langka section strips (Jack fruit)
  • cooking banana (sliced may be used) as substitute for salad fruits

Put coconut milk, water and sugar in pot. Let it boil on moderate low fire. Add sweet potato. Cook until done. Add mochi balls and cook till balls float up in syrup. Add corn and fruits. Simmer five minutes. Serve hot or cold. It usually tastes better the next day.

Mochi Balls:

  • 1½ cups Mochi flour (sweet rice flour
  • 2 cups water (approx.) – add enough water to make a soft dough.

Form small mochi balls and put them into floured platter. Flour in platter will prevent sticking and it will add to thicken coconut mixture.
