Papaya Gulaman (Kanten)

  • 2½ cups crushed ripe papaya
  • ¾ cup gulaman (agar), shred and soak in water
  • 1 cup water
  • 1 tbsp. lemon or lime juice (calamansi)
  • 2/3 cup sugar
  • ½ cup coconut milk

Boil gulaman in water, add sugar and ½ tbsp. lemon juice. When gulaman is dissolved, remove from fire and strain well. Add the other ½ tbsp. lemon juice to papaya, mix well and drain. Add gulaman and coconut milk. Pour in mold. When firm, unmold and serve cold.
