Crab Puffs

  • 8 slices white bread, crust removed, cut into quarters
  • 2 eggs, separated
  • 2 Tbsp. mayonnaise
  • 3 Tbsp. chopped water chestnuts
  • 1 Tbsp. chopped parsley
  • 1/4 tsp. salt
  • Dash of pepper
  • 1 Tbsp. prepared mustard
  • 1 Tbsp. lemon juice
  • 1/2 lb. imitation crab, chopped
  • Paprika

Bake bread pieces on cookie sheet at 350° for 5 minutes. Set aside to cool. Beat yolks until lemon colored. Blend in mayonnaise, water chestnuts, parsley, salt, pepper, mustard and lemon juice. Mix with crab. Beat whites until stiff and fold into crab mixture. Place mix on toasted side of bread. Sprinkle lightly with paprika. Bake at 350° for 15 to 20 minutes or until golden.
